Special Phosphate Mix (SPM)

Lewis Gray Special Phosphate Mix (SPM) is a high-performance binding agent exclusively manufactured for fresh and cooked smallgoods. Unlike standard phosphates that can generate excess heat and struggle to dissolve, SPM is designed for immediate solubility upon contact with meat moisture. It gently adjusts the pH of your mix and aids emulsification, resulting in superior texture and binding. Best of all, SPM enhances visual appeal by causing sausages to visibly “plump” and grow in size during cooking.

This is a highly concentrated formula with a very low usage rate.

Ratio: Use 1g of SPM per 1kg of finished meat block (0.1% usage rate).

Application: Add the specific weight of SPM directly to the meat at the start of mixing.
It will solubilise immediately with the meat’s natural moisture or added water.
