Mixing Ratio: 300g Seasoning : 15kg Meat Block (13kg Lean / 2kg Fat) : 1.5L Water
Coarse mince 13kg of lean pork and 2kg of pork back fat through a 5mm or 6mm plate once only.
Combine with 300g of Spice Mix and 1.5 liters of chilled water.
Mix thoroughly until the liquid is absorbed, then fill into hog casings and coil traditionally or link as preferred.
