Mince 9.2kg lean beef, 1.8kg lean pork, and 1.6kg pork fat once through an 8mm plate to ensure a traditional coarse texture.
Hand mix the minced meat with 400g of Spice Mix and 1.5 liters of water until well combined, then fill into hog casings.
